- 摘要: With its high volumes of production, the food industry has an urgent need for instrumentation that can be used on-line and which produces rapid measurements. As a result, there has been a wealth of research in this field, which is summarised in this important collection. The first part of the book looks at techniques for the rapid detection of contaminants such as pesticides, veterinary drug residues and foreign bodies. The second part of the book considers methods for identifying ingredients, including additives, and measuring product quality.

Many measurements of product and process characteristics have traditionally been 'off-line', involving removing the product and taking it to a quality control laboratory for analysis over a period of hours or even days. However, the development of faster, more automated methods of production, and the shift to more proactive quality and safety management systems such as HACCP, has forced the food industry to look for more rapid methods with the potential for continuous, real-time measurement of products and processes.
